Instructions
Heat olive oil in a large pot over medium heat.
Add chopped onion and celery, and sauté until translucent, about 3-5 minutes.
Stir in curry, cinnamon, and turmeric, and cook until fragrant.
Pour in bone broth, water, and chickpeas, and bring to a boil.
Add diced bell pepper and quinoa, then reduce heat to a simmer.
Cook until the quinoa is tender, approximately 20 minutes.
Taste and adjust seasoning with salt, if necessary.
Serve hot.
