  • 1 tbsp olive oil
  • 2 tsp curry powder
  • 1 tsp ground cinnamon
  • 1 tsp ground turmeric
  • 3/4 cup onion, finely chopped
  • 3/4 cup celery, finely chopped
  • 1 can chickpeas, drained
  • 4 cups Taking Stock Foods Ginger Turmeric Bone Broth
  • 6 cups water
  • 1 green bell pepper, diced
  • 1 1/2 cups quinoa, rinsed
  • salt, to taste


  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and celery, and sauté until translucent, about 3-5 minutes.
  • Stir in curry, cinnamon, and turmeric, and cook until fragrant.
  • Pour in bone broth, water, and chickpeas, and bring to a boil.
  • Add diced bell pepper and quinoa, then reduce heat to a simmer.
  • Cook until the quinoa is tender, approximately 20 minutes.
  • Taste and adjust seasoning with salt, if necessary.
  • Serve hot.
